Quick and Easy Muffins

These muffins are a quick and easy snack or addition to your breakfast; naturally grain, gluten, dairy, and refined sugar free/

RECIPE 

Ingredients

  • 5 eggs

  • 1 cup applesauce

  • ½ cup coconut flour

  • 2-3 tbsp cinnamon

  • 1 tsp baking soda

  • 1 tsp vanilla extract

  • ¼ cup coconut oil

  • 2 tbsp honey or other sweetener of choice

To make

  1. Preheat oven to 400°F

  2. Grease a muffin pan with coconut oil or use a silicone muffin pan

  3. Mix all ingredients in a medium-sized bowl with a whisk

  4. Let sit 5 minutes. This helps the coconut flour absorb moisture and creates a better texture in the finished muffins

  5. Fill tins with about 1/3 cup of batter

  6. Bake 12-15 minutes until starting to brown and not soft when lightly touched on the top.
